As consumers prioritise health[1], there has been growing interest about the presence of polyfluoroalkyl substances, otherwise known as PFAS in parchment paper.[2]  Whilst the presence of PFAS does help to enhance parchment paper’s moisture-resistant and grease-proof properties, more and more professional chefs are swapping to using PFAS-free alternatives, to avoid what’s called ‘the forever chemical’ in their cooking.
