This interest reflects broader cultural curiosity and a shift in dining habits, as consumers seek accessible, exciting new flavours.

What many of these dishes have in common is the tortilla. They have long been a staple in Mexico and South America, forming the base for meals like fajitas, burritos, quesadillas, enchiladas, and chimichangas. In the UK, tortillas’ versatility and convenience have made them a top choice within the ethnic bread sector. Their ability to work with many fillings and flavours has made them essential for home cooks and professional chefs alike seeking to expand their menus.

The UK tortilla market is growing rapidly alongside demand for Mexican food. Knowledge Sourcing Intelligence expects this trend to continue, making tortillas a common household staple. In 2025, the Wholesale Manager reported that nearly half of British consumers had tried Mexican cuisine, which accounts for 8% of value sales in world foods. This growth is set to accelerate.

A major factor driving this trend is the simplicity and adaptability of Mexican recipes, particularly those featuring tortillas. These flatbreads allow easily personalisation of meals and can be adapted to various dietary requirements.

Tortillas are valued for their ease of use in meal preparation, their compatibility with different cooking techniques. These qualities are making them a foodservice staple and a favourite among busy consumers seeking convenient meal solutions.

Of course there is the traditional use of tortillas, filling them or using wedges or fried chips for scooping up salad, dip, or beans, as a base for plates for just about anything that could rest happily between two slices of bread.

Classic and Creative Tortilla Dishes

Most, if not all, chefs know many Mexican dishes made with tortillas, such as quesadillas, fajitas, enchiladas, chicken and tortilla soup. In recent years, Biria has been very popular. Birria, a rich, slow-cooked Mexican stew traditionally made with slow cooked beef or goat, served inside a griddled tortilla soaked the cooking juices with a pot of jus alongside for dipping.

But let’s look at some uses for tortillas that you may not have thought of. 

1. Salchitacos

A salchitaco is a playful fusion dish where a hot dog sausage is wrapped in a warm tortilla instead of a bun, often topped with salsa, cheese, and your favourite condiments.

To make one, simply grill or pan-fry a hot dog, warm a tortilla, place the sausage inside, and add toppings like salsa, diced onions, cheese, and our CHEF Approved Ketchup and Mustard. Roll it up and serve as a fun, portable snack or meal.

Try it Korean style and serve on sticks with some kimchi blended with mayonnaise and gochujang

2. Tortilla Chips with a Contemporary Twist

With a drive for sustainability and rising costs, as our frugal grandparents would approve, animal fat is back on the menu.

So why not make homemade tortilla chips, fried in beef dripping or chicken fat for a unique twist on a classic.

For the middle-aged, this brings back nostalgia; for the younger generation, it’s a novelty, as seen with the beef tallow skincare craze.

Animal fats are used in cooking for their high smoking point, the ability to make things super crispy when fried, staying on trend/sales appeal, keeping relevant, and, not to mention, the umami flavour they impart.

 Animal fat (pork dripping/beef dripping/tallow) can be rendered down from any fat trim, or chicken skin. Ask your butcher/wholesale supplier to source some.

3. Fried Tortilla Bowls

To make a tortilla bowl, toss one of our CHEF Approved Tortillas into the deep fat fryer, filled with our rapeseed oil and push either a large ladle or even an empty domestic-sized can (empty with the label removed) held with metal tongs into the centre, and as you press down, the sides curl up around.

When it’s the desired shade of golden remove and serve with either taco salad, fill with the usual taco fillings or you could fill with anything, Korean, BBQ pork and crunchy pickles, and a raw slaw, with a spicy BBQ sauce (mix our BBQ sauce with crushed chillies, garlic salt and five spice) sprinkle with our sesame seeds and chopped spring onion. Whatever you use, fresh, zingy flavours work best for example fill with fluffy rice or potato salad, along with lean protein and crunchy salads such as this spicy chicken salad

Tortilla bowls could even be filled with sweet fillings such as our chocolate fudge cake served warm with ice cream and fresh berries for an indulgent sharing dessert.

4. Samosas

Tortillas make great samosas.

To make them, fry some lamb mince, onions, and garlic granules with cumin seeds, ground coriander, fennel seeds, and turmeric, and add salt, pepper, and fresh coriander, then fry in vegetable oil until golden.  

Cut the tortilla in half, and mix a flour-and-water paste to hold the tortilla samosa together. To assemble, place a spoonful of filling on one end of the tortilla half, fold one corner over to form a triangle, then keep folding in a triangle shape until you reach the end, sealing the edge with the flour paste.

This creates the classic samosa shape and keeps the filling secure during frying.

5. Pizzas 

With the weight-loss injection craze or for people simply wanting to reduce calories and carbs, a tortilla pizza can be a more appealing option, with at least half the calories and carb content of a regular pizza base.

Use a thin layer of our CHEF Approved tomato paste, sprinkle with oregano, top with mozzarella cheese, and toppings of your choice, such as anchovies, black olives, and capers.

For a French option, why not make a flammekueche, a traditional Alsatian flatbread topped with crème fraiche or sour cream, thinly sliced onions, and ham or bacon? Layer sour cream, onions, and ham before baking, then sprinkle with chopped parsley. 

Or make it Turkish, a Lahmacun (Turkish Flatbread)

Lahmacun, is a thin, round flatbread topped with a spiced minced lamb mixture, tomatoes, and onions.
To make it, using a CHEF Approved flour tortilla, simply spread the seasoned lamb mixture over the tortilla and bake until crispy, then top with fresh herbs and a squeeze of lemon before serving.
